Hand-harvested and hand-sorted from low-yield vineyards. Long fermentation of 24 to 28 days. Partial ageing for 12 months in oak barrels and demi-muids previously used for 3 wines (Taransaud, Orion – over 12 months for 40% of the volume), to preserve the balance of this complex wine, combining aromatic finesse with Mediterranean spice flavors.

These plots, located on the heights of Château de Pennautier, have been cultivated since the 17th century, when its wines were served at Versailles, at an altitude of 320 to 340 m. They were reclaimed from the garrigue scrubland in 1960 to plant Languedoc Grenache, Mediterranean Syrah, as well as Atlantic Cabernet Franc and Malbec. The soil, composed of fine limestone over deeper clay, allows deep rooting and maintains regular moisture levels during dry periods.
